As we slosh damply towards winter, there is not a whole lot of color outside. It's a whole different story inside the GHS greenhouse, however. Inside the protective arch of plastic, and then under another blanket of translucent tarp, bins of compost are giving birth to the pale shoots of cool-season crops. Green leafy veggies like arugula and kale are slowly emerging, the cool temperature failing to thwart their lust for life. The coy winter sun is keeping the shoots timid, but we hope to have a hearty late-winter harvest. Our broccoli raab is coming in with vigor, posing for a great time-lapse series.
